Production Details Cap Classique made from finest parcels of Chardonnay (67%) and Pinot Noir (33%). Handpicked in early morning. Whole bunch pressed - free run juices only. Separate parcels vinified in stainless steel. Grapes picked 17-19°Balling for low alcohol. 60 months bottle fermentation and maturation on lees. Rémuage performed. Disgorged with 7.8 g/l dosage.
