Production Details Hand-harvested, destemmed but not crushed. After sorting, whole berries fermented in vessels for about 18 days. After fermentation, pressed and moved to selected French oak barrels for malolactic fermentation and aging. Blend created during first racking at 6 months, with two more rackings during ageing to assess oak influence before bottling. Aged 20 months, 100% French oak, of which 25% new.
