Production Details Hand-picked grapes from Warwick Estate. Fermented in open-top fermenters with daily pump-overs and punch-downs. Pinotage fermented 2/3 of sugar on skins, then pressed and finished fermentation in tank. After alcoholic fermentation, racked to 2nd and 3rd fill 225L French oak barrels for malolactic fermentation. After MLF, returned to tank, sulphured, and returned to barrel for 14 months aging. Small amount of Cabernet Sauvignon blended pre-bottling to lift fruit component. Rough filtration applied before bottling.
