Production Details Made from single Chenin Blanc vineyard planted 1978 on lower slopes of Simonsberg. Old bush vines producing small harvest of concentrated fruit. Hand picked early morning, whole bunch pressed. Juice clarified naturally. Fermentation in 400L French oak barrels: 25% second fill, balance neutral oak. Barrels rolled monthly for 9 months. Blended January 2020, bottled February 2020.
