Production Details Our dessert wine is based on a legacy of winemaking traditions. The Chenin blanc bush vines are over 54 years old and the Muscat de Alexandrie trellised vines are over 74 years old. Grapes are picked between 36 and 40 Balling, crushed with some skin contact for extraction, and the juice is taken directly to barrels. The wine is fermented naturally in barrels for 2 to 3 weeks, with Chenin Blanc and Muscat fermented separately, then blended after 12 months in barrel.
