Production Details Sourced from various Saxenburg vineyard parcels at 175-260 meters above sea level that receive breezes from both Table Bay and False Bay. The 2025 vintage was described by the producer as having enough winter rain and cold conditions to deliver concentration and complexity. Grapes were picked early in the morning at cool temperatures, received 4-6 hours of skin contact, then were pressed and settled. Most of the wine was cold fermented with selected yeast strains in stainless steel tanks; a small portion (5%) was fermented naturally in older oak barrels. The wine included 4% Semillon for mid-palate texture, then spent 3 months on the lees with lees stirring before blending and bottling.
