Production Details Grapes hand-harvested and cooled overnight. Whole-bunch pressed and naturally settled. Spontaneous fermentation in 300L oak barrels. Aged on lees for 9 months in combination of first-, second-, and third-fill oak. Finest barrels selected for bottling. First SO2 addition only after racking from barrel prior to bottling.
