Production Details Hand-harvested grapes cooled overnight before processing. Whole-bunch pressed. Juice settled naturally overnight without enzymes. Spontaneous fermentation in 300L French oak barrels (80% first fill). Aged on lees in oak for 10 months. First SO2 dose applied after racking.
