Production Details To ensure the utmost quality, our grapes were handpicked during the early morning hours and delicately transported to the winery in 15kg crates. Upon arrival, they were meticulously cooled to a temperature of 4°C before undergoing destemming and crushing. The resulting juice was then carefully stored for a period of two weeks at a consistently chilly 1°C, allowing for optimal conditions prior to the commencement of fermentation. The fermentation process unfolded within tanks over a span of three weeks. Subsequently, the wine underwent racking and was left to rest on its fine lees for an extended period of 11 months. This patient maturation process culminated in the wine being filtered and bottled.
