The grapes were destemmed and crushed, with about 80% naturally fermented in small neutral French oak barrels. The remaining 20% was split between a cool soak before pressing and skin fermentation until dry, then transferred to barrel. The barrels were blended after 8 months, followed by a total of 12 months in barrel and a further year in bottle prior to release.
