Production Details Hand sorted, destemmed and crushed. Skin contact 2-3 hours for delicate colour extraction. 48 hours settling at 13-14°C before fermentation. Commercial yeast fermentation at ~14°C for approximately 10 days. Vineyard block L4, planted 2015, 3 hectares, yielded 15.29 ton/hectare.
