Production Details 36 months total maturation: 36 months in 2nd and 3rd fill 500L French oak barrels, then 24 months in bottle before release. Wine racked twice during oak aging. Bottling date: December 2020. Yield: 6 tons/ha. Grapes hand-sorted in cellar. Cold maceration 2 days, alcoholic fermentation approximately 6 days with pumping over every 4 hours.
