Production Details Cold maceration 2 days. Selected yeast strain inoculation. Alcoholic fermentation approximately 9 days with pumping over every 4 hours. Pressed, settled, and transferred to barrel for malolactic fermentation. 18 months barrel maturation in 50% American oak and 50% French oak, with 70% first-fill oak. After 12 months, best wines selected for further 6 months maturation. Racked twice during 18-month maturation.
