Production Details Rare Stellenbosch interpretation of Sangiovese from a single vineyard on the Helderberg Mountain. The vineyard is trained on the traditional Italian Pergola or Tendone trellising system and the fruit is hand-picked in small lug boxes. In the cellar the grapes are selected and sorted twice, extraction is managed with pigeage or hand punch-downs, fermentation is natural without commercial yeast, and the wine is bottled without fining or filtration after 15 to 16 months in French oak barrels. The wine is intended to continue developing over the next eight years and is recommended for decanting before service.
