Production Details Handpicked from Block 13, home to shiraz vines over 30 years old and protected from the sea breeze by a row of pine trees. The block was picked slowly from midday into the afternoon to ensure warmer grape temperatures on intake. Leaves and excess stem were removed before processing. The vineyard is 200m above sea level and 7km from the ocean. Bunches were left in the sun until late afternoon, then sorted into a stainless-steel tank. Carbon dioxide created an anaerobic environment for 10 days of carbonic fermentation. After fermentation the wine was pressed off the skins and aged for 16 months in 30% new American oak and 20% new French oak. Rootstocks: 101-14, Richter 99. Irrigation: drip. Trellis: Extended Perold, 7 Strand.
