Production Details 100% Stellenbosch Chardonnay; whole berries 100%; zero de-stemming (whole bunch pressing); ferment 50% natural, 50% commercial strain; 300L French oak from Burgundy coopers, 35% new barrels; 12 months maturation; no fining done; unfiltered with natural sediment; volatile acidity 0.46 g/l; hand harvested at 20.5-21.5 Balling harvested in batches; 2.4 hl/ha yield; 2020 vintage had excellent cool spring and early summer months with perfect conditions for Chardonnay.
