Production Details 100% Cabernet Sauvignon from two trellised vineyards: Sunset Vineyard in the Simonsberg and Stonefield on the Helderberg slopes. Harvested by hand into approximately 18 kg baskets at 24-25 Balling, then destemmed, manually sorted, crushed with about 50% whole berries, and fermented in open fermenters with manual punchdowns 6-8 times daily. Average skin contact was 10 days before basket pressing. Free-run and press fractions were blended and racked to stainless steel tanks and 225 litre barrels. Malolactic fermentation took place in barrels and tanks, followed by barrel-to-barrel and barrel-to-tank rackings for clarification and blending. Matured in French oak barrels for 31 months. A selection of 15 barrels was blended before gravity bottling through a cartridge filter.
