Production Details Hand-harvested. Gentle destemming with minimal berry crushing. Different yeasts were selected to ferment each vineyard, with pump overs twice daily for gentle extraction. After alcoholic fermentation, the wine was transferred to barrel for malolactic fermentation, then aged for another 7 months in 300L barrels before racking, filtering, and bottling. Winemaker: Altus Treurnicht.
