Production Details VSP-trellised vineyards in the middle of Helderberg at 200 m are protected from the South Easter. Grapes were picked at optimal ripeness, cooled overnight to 4°C and destemmed into open-top fermenters. The three varieties were fermented separately, with the producer specifying spontaneous fermentation and skin contact for as long as possible. The wine was pressed into small French-oak barrels, 40% new, matured for 18 months, then blended and bottled. Finished-wine analysis also reports free SO2 of 25 mg/L and volatile acidity of 0.81 g/L.
