Production Details 100% Stellenbosch Chardonnay from a single vineyard trellised Chardonnay site on the Helderberg in Stellenbosch. Grapes were picked at optimal ripeness, cooled overnight to 4C, then whole-bunch pressed the next morning. Juice underwent spontaneous fermentation in older French oak with 40% new barrels. One sulfur addition was made in deep winter. Aged 10 months on the lees before blending and bottling. Official technical analysis also lists free SO2 34 mg/l and volatile acidity 0.56 g/l.
