Production Details Seelug 2025 comes from a small, single, trellised Chardonnay vineyard in Firgrove on the foothills of the Helderberg, facing False Bay. Grapes picked at optimal ripeness were cooled overnight to 4°C and whole-bunch pressed the next morning. The juice fermented spontaneously in French oak, comprising older barrels and 40% new barrels. Alliance Wine specifies that 100% of the wine was oaked in French oak for 10 months. The producer records one sulfur addition in deep winter and 10 months on the lees before blending and bottling. Finished-wine analysis also records free SO2 of 26 mg/L and volatile acidity of 0.66 g/L.
