Production Details Grapes originated from vineyards in the Stellenbosch Polkadraai hills area on VSP trellis systems with drip irrigation. Hand-harvested grapes were loaded whole bunch into the press and the juice settled for 24 hours before being racked to 228L French oak barrels for barrel fermentation. Fermentation finished after approximately 10 days. Battonage was done every second day after fermentation and before maturation, then every fortnight during the 11-month in-barrel maturation period.
