Production Details W.O. Stellenbosch. The 2019 vintage followed good rainfall but still reflected the preceding drought, with a smaller crop for the second consecutive year and later, uneven ripening in the late cultivars. Grapes were picked at optimum ripeness from the estate's oldest vineyards and fermented in open fermenters on the skins for 5-8 days at an average temperature of 25°C, with punch-downs every 2 hours. After malolactic fermentation in stainless steel tanks, the wine aged in 100% new French oak for 24 months. After bottling, the wine was stored for 2 years before release.
