Production Details Both cultivars were harvested on the same day in 2022. After cooling in the cold room, they were processed together. The pulp was allowed to cold soak for four days, then co-inoculated with Alchemy III from Anchor. Fermentation occurred over 14 days in open fermenters with punch-downs only. Matured for 11 months in French oak barrels, including first-, second-, and sixth-fill barrels, with 30% new wood. Includes a splash of Cabernet Franc.
