Production Details All component cultivars were destemmed without excessive crushing and all unwanted stalks were removed on the sorting table. The whole-berry component in the open stainless-steel fermenters was 30%. After 12 hours of cold soaking, each must was inoculated with a commercial yeast strain suited to the variety. Pump-overs were given three to four times daily and fermentation lasted 5 to 7 days at 24-28 C. The wine was then gently pressed, gravity fed to second- and third-fill French oak barrels for secondary malolactic fermentation, and matured in 225 litre French oak barrels for 13 months before blending and light filtration prior to bottling.
