Production Details Fruit selected from Fairview's best sites. Handpicked at 24.5 degrees balling, destalked, berry-selected, and fermented as separate batches in open oak foudres with natural fermentation and manual punch-downs twice daily. Darling Shiraz and Cabernet Sauvignon had a few days of extended skin contact after fermentation. Basket pressed, then transferred to French oak barrels for malolactic fermentation and 29 months maturation in 80% new French oak. The source sheet contains an apparent template typo in the bottling sentence ('The Cyril Back 2015 was blended and bottled on 27th of July'), so the bottling year is not confirmed here. Only 6 barrels were produced.
