Production Details Fruit sourced from two dry-farmed vineyards, one in Agter-Paarl and one in Swartland. Paarl vineyard trellised; Swartland vineyard bush vine (bosstok). Hand-picked at 24.5 degrees balling, destalked, berry-selected, and fermented in open oak foudres with natural fermentation and manual punch-downs twice daily. Basket pressed, then transferred to French oak barrels for malolactic fermentation and 26 months maturation in 100% new French oak. Blended and bottled 10 June 2015 with light filtration. Only 7 barrels produced.
