Production Details Hand-harvested and placed into open fermenters in parcels, with a small percentage of bunches fermented without destalking. Gentle pump overs followed fermentation for colour and flavour extraction. The wine was gently pressed and malolactic fermentation was completed in barrel and foudre with time on the skins to stabilise colour and give palate length. The wine spent a further 8 months in 500L and 300L French oak barrels and 2500L foudre barrels, with 40% new wood.
