Production Details Hand-harvested in parcels. Small percentage whole-bunch fermented, 30% air-dried stems added back for spicy notes. Natural fermentation with pump overs for color and flavor extraction. Malolactic fermentation completed in barrels and foudres. 8 months aging in seasoned 500L and 300L French oak barrels and 2500L foudre (Austrian oak, 40% third use).
