Production Details Grenache and Syrah whole-bunch fermented, Cinsault and Mourvèdre crushed and destemmed. Each batch fermented separately with wild/natural yeast. Short post-fermentation maceration. 7 months in 500L and 300L barrels for malolactic fermentation before final blending and bottling.
