Production Details Hand harvested in the early morning using shallow picking crates, transported in refrigerated trucks, and cooled to 5C before pressing. Three pressing fractions are retrieved: Cuvee, Premiere Taille, and Deuxieme Taille. Juice is settled for three days before cold fermentation. A small fraction is fermented in second- to fourth-fill barrels and the majority in temperature-controlled stainless steel tanks. Pinot Noir undergoes about 10 days of cold maceration after destemming. Secondary fermentation takes place under crown cap in bottle, followed by a minimum of 36 months sur lie before disgorgement. Dosage is added to balance the palate.
