Production Details Fruit comes from Chamonix Estate in the Franschhoek region on south- and south-west-facing slopes. Grapes are handpicked and berry-selected on sorting tables; whole berries are fermented in stainless steel tanks, wooden fermenters, and concrete tanks for 2-3 weeks before pressing. After malolactic fermentation, the wine matures for 18 months in 228L French oak barrels with 50% new oak. Components are kept separate until final blending before bottling.
