Production Details Harvested at 22-22.8 °B with total acid of 8g/l and pH of 3.08. Yield: 8 tons/ha. Whole cluster pressed using Champagne pressing cycle with only the cuvée. 100% barrel fermented using 35% new 228L fine grained oak barrels with balance in 2nd and 3rd used barrels. 20% of wine underwent malolactic fermentation.
