Production Details From a 3.25ha vineyard planted to two different clones. Hand harvested, destemmed, naturally fermented in open fermenters for 10 days using ambient yeasts and delestage to coax flavor and colour from the fruit. Must was lightly pressed, racked-off into French oak barrique (25% new) and malolactic fermentation occurs in barrique. Barrel-matured for 11 months and lightly filtered prior to bottling. Aged 2 years in bottle prior to release.
