Production Details Hand harvested into small crates, held overnight in a cold room, extensively hand-sorted, destemmed but not crushed; gentle manual punch-downs twice daily; fermentation peaked at 28°C. No enzymes, added yeast or sulphur were used during winemaking, with a small sulphur addition before bottling.
