Production Details After a cold winter with higher-than-average rainfall, the 2021 season had cooler spring and summer conditions, with 190 hours more under 10C than the previous vintage. Paul Cluver reports 42 mm of rain in the first half of March, creating ideal botrytis conditions. Grapes showing noble rot were left to concentrate further, then harvested on 14-15 April. A second stage of bunch and berry sorting ensured no sour rot was processed. Juice settled at 5C for two days after pressing, and fermentation was controlled at 14-16C over 10 weeks before stabilization and filtration. Release date: March 2022. Production: 1,800 cases (x6).
