Production Details After a cold winter with good rainfall, Paul Cluver reports moderate daytime temperatures and cool nights through the 2022 season. Chardonnay harvest ran from 2022-02-18 to 2022-03-25, with fruit picked at 21.0-22.6 Brix and 7.2-8.0 g/L acidity. The estate has 13.4 hectares of Chardonnay planted at 320-385 meters above sea level. This wine is a blend of several estate vineyard components from vines aged 5-18 years: 8% tank fermented unoaked, 50% fermented in 2,500L oak vats, 6% fermented and aged in concrete egg, and 36% fermented and aged in older 300L barrels. All wines fermented naturally and aged on the lees for 8 months before blending, stabilization, and bottling. Release date: January 2023. Production: 11,000 cases (x6).
