Production Details Berries hand-sorted before crushing. Cold maceration at 12-14°C for 6-8 days. Fermentation began naturally, then inoculated with Burgundian yeast after 5 days. Skin cap hand-punched twice daily. Transferred to French oak barrels (16% new, 24% second fill, balance third and fourth fill) for 12 months malolactic fermentation and maturation. Racked using nitrogen gas before bottling.
