Production Details Noble Late Harvest from identified Sauvignon Blanc vineyard block. Grapes experienced longer hanging time to become naturally infected with Botrytis Cinerea (noble rot). Botrytis fungus causes moisture evaporation, leaving higher concentration of solids including sugars, fruit acids, and minerals. Approximately 10 tons of grapes reduced to 4 tons due to moisture loss. Extraction rate: 380 litres per ton (approximately half of regular Sauvignon Blanc). Fermented to 10% alcohol with high residual sugar content. Can age for at least 5 years. Harvest was earlier than usual due to warmer 2024 weather.
