Production Details Roussanne and Viognier came from trellised, drip-irrigated Paarl vineyards; Sauvignon Blanc came from dryland Darling vineyards. Grapes were harvested very early in the morning and delivered cold to the cellar. Free-run juice settled for two days before fermentation.
