Production Details Handpicked grapes from Darling were crushed and given about 18 hours of skin contact before the juice was racked and settled for inoculation and fermentation in stainless steel tanks. About 40% of the juice was fermented in seasoned French oak barrels and kept on the fine lees for 6 months, with lees stirring during the first 2 months, before the portions were blended, protein stabilised, cold stabilised and bottled.
