Production Details Handpicked at dawn, destemmed, crushed and lightly pressed with 650 litres per ton recovery. Two days settling, inoculated with yeasts. Fermented in 225L French and Austrian oak barrels (33% new, 67% seasoned). Barrel aged sur lie for 8 months with bâtonnage weekly before malolactic fermentation and monthly after. Malolactic fermentation completed in barrel. Wine of Origin: Ceres Plateau.
