Production Details Produced from 100% Pinotage. Hand-picked at 20-22.5°B. One to two hours skin contact followed by destalking and crushing. Cold fermentation at 14°C. Settling and racking prior to fermentation. Yield: 12 tons per hectare. Shale-rich vineyards in Agter-Paarl with supplemented irrigation and well-drained soils.
