Production Details Vineyards range from 70m to 340m altitude. The wine is made up of 38 different parcels. Harvested at 4am to preserve freshness. Each block was fermented separately. 80% wild fermentation and 20% inoculated with Non saccharomyces Cerevisiae to enhance complexity and reduce sulphur requirements. Some ferments took up to 2 months to finish. 10% was barrel aged in neutral oak 500L barrels. The wine spent 6 months on the gross lees before blending and bottling.
