Production Details Handpicked grapes, whole bunch pressed. Majority inoculated with selected yeast; 30% fermented with wild yeast. Barrels rolled monthly post-fermentation to enhance mouthfeel. Fermented and matured 10 months in French oak before blending, stabilisation and bottling.
