Production Details All grapes are estate-grown and hand-harvested in the early morning. After cooling in a cold room, the grapes are destemmed and crushed, then the juice soaks on the skins for 2 to 18 hours before pressing and settling. The clean juice is fermented in stainless-steel tanks at 15 degrees Celsius, then matured on the lees for 6 months in stainless-steel tanks before stabilisation and bottling.
