Production Details Chenin Blanc was assembled from 32% Paarl, 28% Darling, 19% Overhex, and 21% Breedekloof fruit. The Paarl and Overhex Chenin portions underwent carbonic fermentation before pressing to old oak, while the Darling and Breedekloof portions were whole-bunch pressed and fermented in old oak. Roussanne from Breedekloof was whole-bunch pressed and fermented in old oak; Viognier from Constantia was whole-bunch pressed and fermented in concrete egg; Semillon from Darling was whole-bunch pressed and fermented in stainless steel; Colombar and Fernao Pires from Overhex were whole-bunch pressed and fermented in old 600L vats. The wine was bottled under the #SAVESAWINE closure.
