Production Details From a secluded Cederberg block at 940m ASL on the oldest farm in the region, founded in 1790. The vineyard was planted in 2006, with SH22 clone vines grafted onto R99 rootstock. Roughly 30 to 60% of the fruit was fermented as whole clusters, with the balance destemmed as whole berries. Fermentation took place in tulip-shaped concrete fermenters and 1000-litre conical French oak vats, with no more than two pump-overs per day at peak fermentation and submerged-cap fermentation used to soften structure. Spontaneous malolactic conversion was followed by 11 months in 2000-litre conical Austrian oak vats. Bottled without fining. Total production: 3,490 x 750ml and 50 x 1500ml.
