Production Details Trellised vines. Grapes were picked at optimal ripeness, cooled overnight to 4°C, whole-bunch pressed the next morning and spontaneously fermented in older French oak. The wine received one sulfur addition in deep winter, spent 10 months on the lees, and was then blended and bottled. Finished-wine analysis also reports free SO2 of 36 mg/L and volatile acidity of 0.59 g/L.
