Production Details 16 months aging before bottling. 80% French oak and 20% American oak. Harvested at optimum physiological ripeness (25° Balling). Crushed and de-stemmed with 3-day cold-soak. Fermented in rotor tanks for 6-7 days, turned every 4-6 hours. Malolactic fermentation after initial fermentation.
